Our basic ingredients and domestic suppliers are here in the region. We know each other, we know where the livestock is kept and how it is reared. Happy livestock, great meat. Absolutely no factory farming, just respect and understanding for nature.
Regional Suppliers & Produce
A very important part of our nutritional plan for you is regional, sustainable produce. Plants local to Alpbachtal are a prime example. Wild garlic, stinging nettles or dandelions are the better known. Wild herbs and herbs from our garden are abundant – and it goes from nature, to kitchen, to plate, to you. We do our best to shy from non-seasonal produce as there is always a local version which is just as magical and tasty.
Shelf Life through Processing
We do not allow waste in the kitchen. We also process our produce to lengthen the shelf life. We conserve seasonal vegetables and fruits allowing us to use them when needed. Home made in our kitchen; no loss of taste and nutrients.
