We know each other personally, we know how the farmer’s livestock is raised, and we know that they are kept in a species-appropriate husbandry

Regional Suppliers & Seasonal Products

Alongside our regional partnerships, seasonality plays a key role in our kitchen philosophy. We focus on products that naturally thrive in the Alpbachtal Valley and whose origins are deeply rooted in the region.
Wild garlic, stinging nettle and dandelion are among the best-known examples, complemented by other wild herbs and fresh ingredients from our own herb garden.

Our guiding principle is simple: wherever possible, we avoid non-seasonal products and instead create local, seasonal alternatives – full of flavour, authenticity and freshness.

 

Preserving Flavour Through Fermentation

One of our culinary passions is fermentation – a traditional method of preservation that maintains the character, flavour and nutritional value of vegetables.
By fermenting seasonal fruits and vegetables at peak ripeness, we can enjoy them throughout the year without compromise. The result: intense flavours, reduced waste and added benefits for the immune system and gut health.
