Nature hotel in Austria: Our cuisine is regional!
We source the basic ingredients from farmers in the region and local suppliers. We know each other, we know where the animals are kept and that everything is done in a species-appropriate manner. No factory farming, no greed for profit, but appreciation for the animal is the motto here. We introduce you to our regional partners here. If the products are then prepared in our kitchen, it is important to our kitchen team that the entire animal is processed.
Regional suppliers & products
In addition to our regional partners, we place particular emphasis on seasonal products when compiling our dishes. Products that still thrive in the Alpbach area and whose origins are highly valued in the region: Wild garlic, for example, stinging nettle and dandelion are the best known. Other wild herbs and what grows in our own herb garden are also used in our natural cuisine. Our basic principle is to avoid non-seasonal products whenever possible and to conjure up local and seasonal alternatives for you. Which are guaranteed to taste just as good.
Shelf life through fermentation
Another favourite: fermentation. A form of preservation to conserve vegetables without them losing their character. This allows us to process seasonal fruit and vegetables when they are ripe and use them when we need them. The advantages: nothing loses its flavour and it is healthy for the immune system and gut.
Consideration for all diets
For us and our kitchen team, sustainability in terms of enjoyment also means catering for all diets and implementing them according to your wishes. Of course, there is always a vegetarian alternative on our gourmet menu in the evening. If you have a different diet, please let us know before you arrive. (Just write to us here!). We will realise your wishes in a delicious and creative way.

In addition to the ingredients, our partners and our kitchen team, we have another secret to our success: variety. At our nature hotel in Austria, we offer you a wide range of delicacies that are above all varied: Mediterranean delicacies, savoury Tyrolean delicacies, hearty, sweet, but also delicate, light and vital.
